Happy Middle of the Week and WIAW...

Happy middle of the week to you!  I hope it's been a good one so far.  It's been busy on my end, but busy isn't always a bad thing.   I made the mistake of going to the grocery store on Monday night right after work.  I thought for sure that Monday would be less busy than the weekend, but boy was I wrong!  I stood in the check-out line for over a 1/2 hour.  I definitely won't be doing that again.

I came home and tried to get a hard start on meals for the week.  This week's focus was to do a better job at not eating out so much and paying better attention to portions!  I made Nick and I some egg salad from scratch for lunches at work, marinated chicken for the grill for Tuesday's dinner and made the filling for egg rolls for tonight's dinner.  Thus, I never made it to my "Going for the Goals" post.  Fooey.

Even though prepping meals ahead of time was a lot of work and left me exhausted, it's made actual meal times so much nicer.  Everything I need is right there and ready to go!  I want to try and keep up this routine and do meal prep on Sunday nights for the week ahead.

Outside of food talk, our house is still on the market.  Did you know the average amount of time right now that a house stays on the market is 120 days?  Ouch.  That would put us keeping our house in "showing" readiness until October.  We had some promising showings over the weekend so that was encouraging.  Hopefully we will have just as much activity this coming weekend as well!  My goal is to clean out my clothes this weekend and donate what doesn't fit to the Goodwill.  I have a bad habit of holding on to clothes I haven't worn in a year or two, thinking that one day I might wear it.  That needs to change!

I also haven't made much time to work on my Smash book or jewelry so I hope to carve out some time for that this weekend.  Now moving on to WIAW (What I Ate Wednesday)....

I mentioned last week that July's WIAW is not only focused on food, but also exercise.  Ugh.  I'm still not doing too well in that area.  Nick and I have been diligent about walking around an hour a day at work, but it's definitely not an aerobic work out by any means.  Today we even walked in the rain!  It's been hard to play any tennis because we've been under a major heat wave lately and then this week it's rained every day.  I definitely have been doing more around the house and have spent less time on the couch in front of the TV so that's a good start! 

Breakfast

I started having a new breakfast this week that I really enjoy and it keeps me full until lunch.  Score!  I lightly toasted an English Muffin and topped it with 1 Tablespoon of Peanut Butter and a sliced banana.  I've been also having a Yoplait Light Yogurt on the side, along with some H20.  I'm trying to take myself off of caffeine.  Help me!


Lunch

Today was our lunch out of the office day.  After seeing a Pizza Hut commercial on TV multiple times last night, pizza sounded like a good choice.  We met up with my mother-in-law at a local pizzeria and got caught in a downpour.  Not fun!  This pizzeria has alot of "speciality slices" and I saw one that  I had never tried before.  I decided to try a slice of the Cheese Steak Pizza.  The slice had steak, mushrooms and a variety of cheeses on it and honestly wasn't that great.  It was dry because it didn't have any sauce and the slice didn't have much flavor either.  Fail.  Oh well. 


Dinner

One of my favorite foods to order at Chili's are their Southwestern Egg Rolls.  It's probably one of the worst items nutrition wise to order so I now refrain from getting them.  Thus, I thought I'd google around and see if I could find a "healthier" version.  I found a recipe on Annie's Eats website and decided to give it a try.  I modified her recipe by adding chicken and not using green onions.  I served the egg rolls with a side of Mexican rice and dinner was pretty tasty!  I also used some low-fat, low calorie Ranch dressing to dip the egg rolls in.


Here's the Ranch I used that I highly recommend!  I've always struggled to find a "healthy" version of Ranch that I enjoy and this might totally be the one!  It's a little more tangy than full calorie/full fat Ranch which just means you don't even need very much of it.  I actually found this at Walmart.  I noticed that it doesn't have as long of a shelf life as regular dressing but it's so worth it!

Well it's off to try and finish the Hunger Games and call it a night!  I think taking myself off of caffeine has definitely caused a decrease in my energy level.  I'm seriously considering joining the gym again because I know how much exercising helps with my energy levels.  Are any of you or have you ever been a member of O2 Fitness Clubs?  I'm not sure if they are nationwide, but I can get a pretty good discount and it's not too far from where we live.  I might just have to do a trial run soon and see if I like it!
